                                  Gongura Pachadi is a signature Andhra recipe. Most of the people of Andhra Pradesh love to eat Gongura chutney. Added onions with a green chilli gives more flavour to it.

It is also easy to prepare. We can eat it instantly or store it for long time.
Here are the Ingredients:
  • Fresh Gongura leaves - 2 bunches
  • Coriander seeds - 2 tsp
  • Cumin seeds - 1 tsp
  • Fenugreek seeds - 1/2 tsp
  • Mustard seeds - 1/2 tsp
  • Turmeric -1/4 tsp
  • Hing - 1/4 tsp
  • Green chillies - 6
  • Dry red chillies - 2
  • Oil - 2 tsp
  • Salt as required


Preparation Procedure:

Step-1:
In a pan pour a tsp of oil, add gongura leaves and fry until the leaves start to lose colour.
Step-2:
Transfer the leaves to a plate and keep aside to cool.
Step-3:
Now, add the rest of the oil to the same pan and add mustard seeds.
Step-4:
When they splutter, add cumin seeds along with coriander seeds, fenugreek seeds, green and red chillies and stir really well.
Step-5:
To this add the turmeric and hing and mix well.
Step-6:
Cook well and remove from the flame and leave aside to cool.
Step-7:
When the mixture cools, grind them into a fine paste along with the leaves adding a little amount of water if needed.

You can also add onions, fried garlic cloves and fried red chillies or green chillies  for seasoning or added flavour.
